Where to taste the best Landes pastis?

Landes pastis, a sweet treasure of regional gastronomy, is an emblematic pastry of south-western France. This soft cake, delicately flavored with vanilla, rum and brown sugar, seduces with its airy texture and rich flavors, offering a true gustatory pleasure. Protected and promoted by a brotherhood based in Luxey, pastis landais is much more than a dessert: it's a veritable cultural institution.

Be careful not to confuse pastis landais with Mitchut, a half-baked variant with a tender, moister center, baked in the middle of the oven. Although a local specialty, Mitchut is distinct from traditional Landais pastis.

A SWEET TRADITION WITH DEEP ROOTS

Pastis Landais, a must-try speciality of Landes gastronomy, is the embodiment of traditional know-how and the richness of local produce. This cake, which means "leavened dough" in Gascon and Occitan, has its origins in the 17th century, when it was made in large quantities in village bread ovens to celebrate festivals and special occasions. Often confused with the aniseed-flavored drink of the southeast, pastis landais is in fact a melt-in-the-mouth, compact and deliciously flavored brioche.

Prepared with quality ingredients such as flour, milk, butter, eggs and sugar, it is enhanced with sourdough to obtain a light, fluffy texture. Slow, artisanal baking is reminiscent of ancestral methods, while the aromas of rum and vanilla add a gourmet touch to this sweet treat. For over 40 years, passionate craftsmen have been perpetuating this culinary tradition, bringing a unique gustatory joy to every tasting experience.

La Mitchuterie - Hossegor

Inherited from his great-grandmother and then his mother Christine, the recipe for MITCHUT pastis Landais is the fruit of meticulous memory work. Mitchut pastis is made by hand, in small quantities, every day in a small workshop in Capbreton. The basic products are meticulously selected for their high quality, and contain no preservatives. Pastis de la Chalosse from Maison Laborde - Ozourt

Francette Laborde, born in 1935, naturally embarked on the baking adventure to support her husband, Marcel.

In 1978, a visit changed their daily routine: they invited a patisserie representative to dinner, and he suggested they add Landes pastis to their recipe book. In the first few days, 50 pastis are produced. Marcel and his apprentice prepare the dough, while Francette takes care of measuring out the ingredients and bookkeeping. The rum brioche is initially sold in small local grocery stores (such as Poyartin), and is sometimes found on the stalls of the Dax market.

Its recipe, unchanged for over 40 years, has made Pastis a household name in the Landes region, supplying more than 50 local distributors!

Maison Marrocq - Souprosse

Georgette and Albert Marrocq-Dulucq, bakers by trade, founded Au Bon Pastis Landais in Souprosse in a bakery dating from the 1830s. Their main activity was baking, but they also made pastis on demand.

After the Second World War, they devoted themselves exclusively to the production of pastis landais et merveilles. Their daughter and her husband joined the business in their youth, devoting their entire careers to it before passing the torch to their sons. In September 2022, after 42 years of service, Mathieu surprised everyone by announcing his intention to perpetuate the family know-how.

So, after 80 years and four generations, Mathieu decided to create the "Maison Marrocq" brand to diversify his offer and share his family's history through exceptional products.
